About

Across Asia, street food is part of everyday life, and Rolling Kitchen Challenge gives your team its own food business on wheels. Each team starts with a brief covering the main ingredients, the trading location, the target customers and the opening hours.

With the brief in hand, teams make the decisions any food entrepreneur faces: a brand name, a signature dish, how the food will be presented and how it will be priced.

They also plan the business side, setting a sales strategy, a break rota and clear responsibilities for every team member, from head chef to front of house.

When the clock starts, the kitchens open and teams bring their concept to life. At the end, each team presents its signature dish and introduces its head chef, and the judges choose the best rolling kitchen of the day.

Learning outcomes

Rolling Kitchen Challenge is a collaborative way to develop teamwork, communication and time management in a lively, hands-on setting.

Turning a brief into a brand, menu and sales plan shows the value of good planning and organisation. Teams soon see how decisions about price, presentation and customers all influence one another. Those that settle on a clear concept early tend to run the smoothest kitchens.

Running a kitchen brings together colleagues from different departments, levels and personalities. Each person discovers their strengths, takes ownership of their station and works towards the team's shared goal.

Presenting to the judges adds a final test of clear communication and customer focus. Because everyone has a defined role, colleagues see how their contribution affects the customer, the team and the final result.
